Easiest Peanut Butter Fudge

So at the beginning of this year I decided I was finally going to lose that 10ish pounds I've been wanting to get ride of forever (12 to be exact). So in order to do that I've drastically changed what I eat - since as much as I would love to be able to crank out a workout every night, that just isn't realistic at this point (school, work, kids, trying to sell the house, etc). One way I've changed is that I'm eating way more fruits than I use to. Almost every morning I make a fruit smoothie and I'm totally digging them. Also for snacks I've been sticking to apples or veggie straws. Already lost over 4 pounds, less than 8 to go!

So last weekend for dinner at my aunts house (I usually provide dessert) I decided I wanted to make something with peanut butter. Why? Because I've noticed I have an absurd amount in my house and I have to start using it up. So I went to allrecipes and searched for a recipe that I had all the ingredients in the house for so I wouldn't have to run out. I decided on the Easiest Peanut Butter Fudge recipe. It was incredibly easy to make and ending up tasting fantastic. I had lots of left overs and got to take some to work for all the ladies to enjoy. I did change the recipe slightly from reading some of the comments, so I changed: down to 2 cups (instead of 2.25) of brown sugar, up to 1 cup (from .75 cups) of peanut butter and down to 3 cups (instead of 3.5) cups of confectioners sugar. Skinny Macaroni and Cheese Soup with Broccoli

Wow how time goes by fast! Just a few short weeks until VACATION! Can't wait! I'm so sick of winter and definitely need some sun on my skin! This weekend or next I'll have to go through all mine and the kids clothes to make sure we have enough stuff to wear!

So a few weeks ago I tried a new recipe that I found on pinterest - Skinny Macaroni and Cheese Soup with Broccoli! I followed the directions pretty closely but I didn't measure some of the stuff exactly. I also didn't use a large carrot, I used several baby carrots - since that is what I had in the house. I also didn't add the onion since I'm not a big fan of it. I have to say, that I loved it! The kids seem to enjoy it too since they ate a bunch of it (though Connor tried to eat around the broccoli, lol). This is something I will definitely consider making again in the future. It took a little longer than I usually have time to spend on making dinner but it was worth it. The recipe made enough for Connor & Savannah to have a small bowl each, Scott & I to have 2 bowls each, and I had enough leftovers for 2 lunches!

Loaded Cauliflower

So I decided to start up a new blog. I still have my other one, but I became overwhelmed with all the different things I had going on there and I just fell way behind with everything. So this particular blog will just be about all the new recipes I try, I think I can manage to stay on top of this and not fall behind!

So I've made some awesome things in the last several weeks but since at this point it's hard for me to remember if I changed any ingredients or not, I'll just start with this past Sunday's dinner - Loaded Cauliflower. I didn't actually measure any of the ingredients and I didn't use any chives or ranch/sour cream (I did put sour cream on the kids but I'm not a fan, so mine didn't include this). I absolutely loved how this turned out. It was so good and with a large bowl it was filling enough to be my entire dinner. Connor wasn't a big fan of the cauliflower part, but did eat about 1/3 of his bowl, and Savannah seemed to love it and ate 2/3 of hers. It even made enough that I got to bring some to work today for lunch!
